Easy Pancakes from Scratch

My kids LOVE these pancakes. It’s such a kid friendly recipe. It’s so easy to make. It only requires 4 ingredients. Plus it’s very easy to remember the measurement proportions. Once you do these easy pancakes from scratch, chances are you won’t buy pancake mixes anymore.

The Proportions

I mentioned earlier that it’s so easy to remember the measurement proportions of this recipe. All you need to remember is 2 : 2 : 2 : 1/2. What I mean by this is if you use 2 cups of self-raising flour, you will need 2 eggs, 2 cups of milk and 1/2 cup of sugar. This proportion makes heaps of pancakes – more than my family of 5 can consume. But I do it anyway, because I like freezing the leftovers to have on another morning. So if you want to make a smaller batch, you would simply divide this proportion in half. 1 cup of self-raising flour will  need 1 egg, 1 cup of milk and 1/4 cup of sugar. Easy to remember right? So assuming we make a huge batch, like I do, this is what we will need…

Ingredients to Make Easy Pancakes from Scratch

  • 2 cups self raising flour*
  • 2 eggs
  • 2 cups milk
  • 1/2 cup sugar

* If you don’t have self-raising flour, here’s an alternative: 2 cups plain flour plus 2 tsp. baking powder

How to Make Easy Pancakes from Scratch

Simply mix all 4 ingredients in a bowl using a whisk until all lumps are dissolved and batter is smooth. Then pour the batter on a warm frying pan sprayed with a bit of oil. We do 3 small pancakes in one big pan, because my kids like small sized pancakes. When the batter bubbles on top, flip the pancakes. Let it cook for a few seconds more, then remove it from the pan. Usually, as soon as we flip all 3 pancakes, it is time to get the first flipped pancake out.


Easy Pancakes from Scratch - Cooking with Kids

Serve with your favorite topping. I try to let the kids have it with maple syrup and berries. They will eat probably 1 small pancake this way. Then they will shift to their preference, which is Nutella with bananas or strawberries on top. No use struggling. At least they get all those fruits in their diet  🙂

Pancakes from Scratch - Easy to Remember Recipe

How easy was that? Make this a cooking activity with your kids! This is a recipe that my 8-year old daughter could do on her own with minimal supervision. My 3 and 5-year old kids usually help in mixing the batter. But quite recently, my 5 year old has taken an interest in flipping the pancakes (pictured above), which he does try to do on his own. Sometimes he does it successfully, but most times, I guide his hand to make his wrist twist in flipping it.

    These look delicious. I have always just bought the kind that you just add water to from the store because I thought that making them from scratch had to be a huge pain, but your recipe looks so easy that I have to give it a try.
